The Advanced class is not as structured as the Introduction to BBQ Class, to enroll in the Advanced class you need to have already attended the Introduction to BBQ Class.
The Advanced class looks at unusual BBQ techniques and some challanging foods. The content is driven by ingredient availability, we could have fresh Lobster, Vennison, Kangaroo or Crocodile depending on the season. The techniques we explore range from cooking in clay, hot rocks, Tandoor, Spit roasting to primative ideas like direct coal cooking.
I try to accomodate the wishes of the participants; if a number of the students want to know how to roast a suckling pig, then I will incorporate that.
