The basic barbecue course is a full day beginning at 9:00 am and finishing sometime just after 4:00 pm each day. The pace is quite relentless, we don't stop for formal breaks like lunch or anything, there is never a time when we are not cooking food.
There is also a short 3 hour compressed version, perfect for teambuilding or a private group of ten or more, an evening of social networking with serious BBQ lessons as well.
We use both the Weber Kettle and Hooded Gas Grill and no matter what we are cooking we discuss the cooking methods for both.
We cover a variety of styles of food, the idea is to inspire and experiment with all the cooking techniques and in particular to step aside every now and again from what would normally be described as barbecue.
The aim is to make participants comfortable enough with all the techniques so that they are happy to experiment with new recipes and new ideas. In addition to this, students go away from the class having mastered a number of signature dishes that are easy and will impress anyone they invite to a barbeque.
We discuss the difference between a charcoal fire and a heat bead fire, direct, indirect and covered cooking on both the gas grill and weber kettle as well as looking at other outdoor cooking methods and devices.
It is more about the technique than it is what we are cooking. We talk quite a bit about what is happening to the food as we cook it, and tricks and tips on how to get the best out of your barbecue no matter what kind of barbecue it is.
Everybody attending the course gets a copy of the course notes which details not only numerous recipes but goes into considerable depth on cooking techniques, using internal temperature to determine "doneness", smoking methods, grilling and baking techniques.
Each day you will go away not needing dinner, there is a considerable amount to digest, in both senses of the word.
This is not a "gourmet, grill little things on sticks then pour a pretty coloured sauce over”, kind of class, this is, down-to-earth, serious, get your hands dirty barbecue - we do lots of jokes and have a whole lot of fun!
It is important to think about BBQ School not as learning a set number of recipes, but as an exploration of the techniques and skills that will make your backyard BBQ an enjoyable and productive experience well into the future. You will learn all the basic techniques as well as more advanced styles like smoking, you will learn the science of food treatments and cooking techniques, you will have fun and you will get your hands dirty, you will take home an arsenal of skills and secrets that you can treat your family and guests to the very next day!
BBQ School is a relentless day of cooking, tasting and jokes, you will never look at your BBQ the same way again. This is serious, take no prisoners real BBQ! This class will make you a hero in your own backyard.
You get the days tuition, more food than you can eat, email and mobile phone access to me in case you need it, a copy of my 146 page BBQ Cookbook, a digital temperature probe as well as quick reference fact sheets.
You need to bring a sense of humor, a pad and pen, liquid refreshment of your choice (and don’t forget one for the teacher), your appetite (don’t eat breakfast and don’t plan to go out for dinner) and an apron (you will get dirty).
The actual dishes we cook vary seasonally, but to give an example, the following is a list of the major things we usually cook at the full day class:
Smoked Mussels, Prosciutto Prawns, Plank Grilled Salmon, Chilli Pineapple, Grilled Fruitcake, Chocolate Bananas, Pizza' Bread, Rack of Lamb, Slow cooked Rack of Beef, Chicken Breast Lemon Butter, Whole Fish, Master Stock Chicken, Beer Can Chicken, Brined Chicken Wings, Souvlaki, Mini Fillet Mignon Poach Finished, Beggars Chicken, Eggplant Fan.
Beyond the BBQ School Introductory class, there is an Advanced class, you need to have been to the Introductory class before enrolling in the Advanced class.

Thanks for yesterday - had an excellent time and learned a load of new tricks. Definitely like the focus on techniques rather than just recipes... I picked up heaps of things that i can use on a regular basis. Last time I went to a cooking class I think I ended up using maybe one recipe as the rest involved equipment I didn't have or ingredients I couldn't get!
I was just having a look through the cookbook - with that and all those fact sheets I’ve now got a wealth of information to refer to.
